Vitamins fall into two broad categories based on how they dissolve and move through the body: fat-soluble and water-soluble. Knowing which group a vitamin belongs to matters because it shapes how much your body can store, how quickly excess is cleared, and where toxicity risk is most likely to appear.

What Makes a Vitamin Fat Soluble or Water Soluble?

Fat-soluble vitamins, which include vitamins A, D, E, and K, require dietary fat for absorption and travel through the lymphatic system before entering the bloodstream. The liver and fatty tissues can hold reserves of these vitamins for weeks or months. Because the body does not flush them quickly, taking large amounts over time can lead to accumulation and, in some cases, toxicity.

Water-soluble vitamins, which include vitamin C and the eight B vitamins, dissolve directly in water and pass into the bloodstream without needing fat as a carrier. The kidneys filter out amounts the body does not immediately use, so these vitamins are generally cleared faster. That said, faster clearance does not mean unlimited intake is safe, and each water-soluble vitamin still has a defined upper limit where risk of adverse effects begins.

A Closer Look: Vitamin A (Fat Soluble)

What it does

According to the NIH Office of Dietary Supplements, vitamin A supports normal vision as an essential component of rhodopsin, the light-sensitive protein in the retina. It also maintains the conjunctival membranes and cornea, plays a role in immune function, and is involved in cellular communication.

How much adults need

The NIH Office of Dietary Supplements reports the Recommended Dietary Allowance for vitamin A at 900 micrograms of retinol activity equivalents (mcg RAE) per day for adult men and 700 mcg RAE per day for adult women aged 19 and older. When the source is preformed vitamin A (retinol), 900 mcg RAE equals roughly 3,000 IU.

Upper limit and safety

The Tolerable Upper Intake Level (UL) for preformed vitamin A, meaning retinol and retinyl esters from food and supplements combined, is 3,000 mcg per day for adults 19 and older, which is approximately 10,000 IU. No UL has been set for provitamin A carotenoids such as beta-carotene, because the body converts them to active vitamin A only as needed. Preformed vitamin A is stored in the liver and can become toxic if intake consistently exceeds the UL. People who are pregnant, may become pregnant, or are breastfeeding are advised not to take high-dose vitamin A supplements above 3,000 mcg per day.

Drug interactions

Always talk to a doctor or pharmacist before combining vitamin A supplements with any medication. Key interactions identified by the NIH Office of Dietary Supplements include the following.

  • Orlistat (Alli, Xenical): this weight-loss drug can reduce absorption of vitamin A and other fat-soluble vitamins, lowering plasma levels. Manufacturers recommend taking a multivitamin containing vitamin A and beta-carotene.
  • Synthetic retinoids such as acitretin (Soriatane) and bexarotene (Targretin): combining these with vitamin A supplements can increase the risk of hypervitaminosis A.
  • Retinoid medications such as isotretinoin or etretinate: combined with excess preformed vitamin A, these can contribute to harmful effects including birth defects.

A Closer Look: Vitamin C (Water Soluble)

What it does

The NIH Office of Dietary Supplements describes vitamin C as required for the biosynthesis of collagen, an essential component of connective tissue that plays a vital role in wound healing. It is also needed to make L-carnitine and certain neurotransmitters, and it acts as a physiological antioxidant that limits damage from free radicals and helps regenerate other antioxidants, including vitamin E.

How much adults need

The Recommended Dietary Allowance reported by the NIH Office of Dietary Supplements is 90 mg per day for adult men and 75 mg per day for adult women aged 19 and older.

Upper limit and safety

The UL for vitamin C is 2,000 mg per day for adults. Intakes above this level raise the risk of gastrointestinal effects such as diarrhea and cramps. The UL does not apply to people receiving vitamin C for medical treatment under a physician's care.

Drug interactions

Talk to a doctor before combining vitamin C supplements with any treatment. The NIH Office of Dietary Supplements highlights two areas of concern.

  • Chemotherapy and radiation therapy: it is uncertain whether high-dose vitamin C protects tumor cells, protects normal tissue, or alters treatment effectiveness. Consult an oncologist before taking vitamin C in high doses during cancer treatment.
  • Statin and niacin therapy: vitamin C combined with other antioxidants may reduce the rise in HDL cholesterol produced by niacin plus simvastatin. Clinicians should monitor lipid levels in people taking both statins and antioxidant supplements.
